Course Objectives

By the end of this workshop, participants will:

  • Understand the chemistry and microbiology of agarwood wine fermentation.
  • Learn the full process — from raw material preparation to aging and bottling.
  • Formulate their own agarwood-based wine recipes.
  • Gain insights into licensing, product branding, and market opportunities.

COURSE MODULES

Day 1 – Fundamentals of Agarwood Wine Making

Morning:

  • Introduction to Agarwood (Aquilaria malaccensis) and its aromatic compounds
  • The concept of agarwood infusion in alcoholic beverages
  • Overview of fermentation science (yeasts, enzymes, and sugars)
  • Equipment and sanitation protocols

Afternoon:

  • Demonstration: Preparing Agarwood Extracts for Wine Infusion
  • Selection and preparation of fermentation media (sugar, yeast, and water ratios)
  • Hands-on: Starter fermentation setup (Participants create their first batch)

Day 2 – Advanced Fermentation and Processing

Morning:

  • Monitoring and controlling fermentation (temperature, pH, and alcohol content)
  • Troubleshooting fermentation issues (off-flavors, contamination, etc.)
  • Secondary fermentation and flavor development techniques

Afternoon:

  • Clarification, racking, and filtration
  • Agarwood essence and natural flavor enhancers (herbs, fruits, honey)
  • Hands-on: Flavor infusion & post-fermentation conditioning

Day 3 – Bottling, Branding & Business Development

Morning:

  • Bottling, labeling, and aging techniques
  • Quality assurance and sensory evaluation (taste, aroma, clarity)

Afternoon:

  • Licensing and regulatory requirements (FDA, DTI, excise permits)
  • Costing, pricing, and small-scale commercialization
  • Developing your Agarwood Wine Brand – storytelling, packaging, and marketing
  • Final evaluation & awarding of certificates
